The Bitey Finisher Sharpening Stone #600/#1200

The Bitey Finisher is a #600/#1200 coarse-grit finishing stone specifically designed to give your kitchen knives a sharp, high-performance edge. Unlike ultra-fine stones, this stone creates microscopic serrations that enhance grip and control, allowing you to slice through tough vegetables, meat, and other ingredients with ease.

Ideal for busy kitchens and everyday cooking, this stone provides an edge with bite without pursuing mirror-polished perfection. Designed by Takayuki Shibata, it is perfect for both professional chefs and home cooks. Simply splash water on the stone to sharpen—no soaking required. For optimal results, finish with a leather strop for precision and long-lasting performance.

How to use:

  • Soak the stone in water for 10 minutes—extended soaking isn’t necessary.
  • Start on the 600 grit side: sharpen one side until a burr forms, then the other. Work both sides alternately until a slight burr remains.
  • Repeat the same process on the 1200 grit side.
  • Then, return to 600 grit and make one stroke from heel to tip on the left side, followed by one stroke on 1200 grit for the right side.
  • Alternate 3–4 times.
  • Finish by gently stropping the knife on a leather strop for a polished yet toothy edge.

Specifications:

Grit: #600 / #1.200
Dimensions:    203 x 76 x 21mm
Maker: Takayuki Shibata
